Ingredients:
500 g green beans (cut off the tops and tails and cut into pieces of 5 cm) 500 g Eggplant (cut into small pieces)
500 g courgettes (remove ends, cut in half lengthwise and cut into slices 2.5 cm thick)
2 large sweet green pepper (remove the seeds and cut into strips)
500 g potatoes (peeled and cut into small pieces)
750 g tomatoes (remove skin and cut into slices)

300 ml olive oil
chopped parsley
1/4 liter of hot water
Preparation:
1 Place all the vegetables in layers in a large saucepan.
2 Add the salt, pepper, sugar, olive oil, parsley and hot water.
3 Cover and simmer over low heat for 1.5 hours, or in a preheated oven at 180 ° C for 2 hours, until most of the vegetables are tender and almost all liquid has evaporated.
4 Serve cold.
